The best Sunday morning breakfast recipe (thanks Dad!) - it's like a lovechild between oatmeal and coffee cake. Pair with this coffee and this creamer. Yes - I pair beverages with my breakfast meals... is that weird?
For the oats:
- 2 tablespoons butter, melted
- 2 eggs
- 3 tablespoons brown sugar
- 1 and 1/2 cups milk
- 2 teaspoons pure vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 cups rolled oats
For the topping:
- /2 cup brown sugar
- 1/2 cup flour
- 1/4 cup butter, softened
- 1/2 teaspoon cinnamon
Preheat the oven to 350 degrees. Mist an 8 inch square baking dish with non-stick spray and set aside. In a large mixing bowl, combine melted butter, eggs, and brown sugar. Whisk until blended.
Stir in milk and vanilla.
Add baking powder, salt, and oats - stir until combined.
Pour into the greased baking dish and set aside.
In a small bowl, combine brown sugar, flour, cinnamon, and butter.
Don't forget to spill.
Start cutting the butter into the flour mixture. With a fork I swear, it takes about a year to get the right consistency. I usually start to lose my will to live when it gets to this point...
... but keep going. It needs to get to this point:
Then sprinkle it over the oatmeal mixture in the baking dish and pop in the oven!
Bake for 35 minutes and it will come out looking like this:
