Sometimes s'mores seem like more work than they're worth. So, I invented a simple candy to satisfy that nighttime summer craving without the whole orchestration of a fire, bending coat hangers, and a sticky mess in the hair, on the clothes, etc. Behold... the s'mores bites:
They're supremely easy... to make s'mores filling:
Pour equal parts of marshmallow fluff and graham cracker crumbs in a mixing bowl (a cup of each should make about 50 bites worth of filling)... mix it all up 'til it's the consistency of play-doh and the crumbs are mixed evenly through the fluff. It should be stiff but pliable enough to form into little discs. Tip: lightly flour your fingertips before shaping the filling... or just let the filling get stuck to your fingers so when you're done you can chew off your fingertips. I think you can guess which method I follow... let's just say I'm typing this with bloody stumps where my fingers used to be.
To assemble, simply follow this recipe, but replace the peanut butter filling with the s'mores filling.
